CURRENT BREAD SCHEDULE

 

All of our bread starts with three ingredients:

Sustainably grown, stone-ground Northeast grain // water // and salt.

Some of the grain and some of the water are perpetually fermented in daily cycles as our sourdough cultures - making the bread rise, and transforming its raw ingredients into a nutritious, delicious, and digestible staple.

A french country levain, a flavorful everyday bread made with sifted wheat flour, whole grain rye and sea salt. Its burnished crusty exterior and soft crumb are the perfect accompaniment to just about any meal. 2lb. (pictured above)

BALTIC RYE

A dark, sweet & savory 100% organic Maine rye bread made with whole rye berries, dark malted barley, East Alstead Roasting Co. coffee, and blackstrap molasses. Topping options are endless - think real pumpernickel. Keeps over one month refrigerated. 1.75 lb / 1/3 pullman loaf.

SESAME SPELT

Crusty batard pairing nutty fresh-milled whole grain spelt and sifted wheat with toasted organic sesame seeds inside and out, and sea salt. 1.75lb.

OLIVE PAV´E

French for ‘cobblestone’ -  a soft rustic slab flavored with floral Japanese buckwheat, extra virgin olive oil, and Castelvetrano and Kalamata olives. 1.75lb.

SMOKED POTATO & SWEET ONION

Inspired by campfire cooking, Maine potatoes are cold smoked and folded into our sifted wheat dough with charred and caramelized sweet onions. 1.75lb.

BIRD

Nutty fresh-milled whole grain spelt and wheat loaded with organic sesame, pumpkin, sunflower, flax, poppy, and caraway seeds. 1.75lb loaf, baked 3 to a pullman pan.

NORDIC RYE

A Nordic-style rye with organic Maine whole rye berries, malted barley, organic seeds (sunflower, pepitas, golden flax), and country breadcrumbs. 1.75 lb / 1/3 pullman loaf.

MAPLE OATMEAL

A crusty boule with a custardy interior, this loaf features Maine rolled oats with a kiss of maple folded into our naturally leavened wheat dough. 2lb.

Nutritious heirloom flint corn from Liberation Farms turned into masa by Regards, stone-ground Glenn wheat, and a healthy glug of blackstrap molasses. 1.75lb.
