Sorry, we do not ship our products at this time. As we aim to keep our environmental impact small, we recommend you research a bakery using local grain near you - you may be surprised at what you find! Maine Grain Alliance is a great resource.

Currently all of our breads are vegan. Some of our holiday specials (like brioche, hot cross buns, babka) are enriched with local dairy and eggs.

Important to note: Our bakery cannot be certified gluten-free due to our constant work with wheat flour. That being said, the nature of our ingredients and slow sourdough process may work for you - we have many bread-eating customers who are otherwise gluten intolerant, not celiac. See Our Bread page for more information - and we recommend consulting with your doctor and your gut. Our brownies and several of our cookies are made with naturally gluten-free ingredients.

In a nutshell, color is flavor!
We bake from traditions rooted in European country bread and pastry - simple, high quality ingredients are utilized to their full potential. Bread is baked to ‘bien cuit’ or ‘tres bien cuit’, meaning a fully caramelized crust that contrasts with a sweet, tender interior. Pastry is baked to a nutty red, fully baking and caramelizing the butter and flour. In this vein, we use only stone-ground sustainably-grown regional grain, meaning it has all the nutrients of the grains ground together in the flour - a very different milling process from almost all store-bought grain and bread. This nutrient-packed flour caramelizes more readily, and is loaded with flavor. In our sweet treats, we utilize less refined organic sugar and unrefined sweeteners like maple syrup and honey, which are richer in color. We hope you will enjoy this old world contrast of simplicity, health and flavor.

We have moved! We are now located right on the water in South Portland, 695 Broadway Unit 2. Next to Lambs and Paulin’s Tire, just off the Casco Bay Bridge, and right on the bike path!
